		<description>The antioxidants in tea do start to break down after the tea is brewed.  This is why bottled iced teas have much less in the way of antioxidants. Refrigerating tea does not cause anything in the tea to deteriorate--if anything, it preserves the antioxidants in the tea for longer, and keeps micro-organisms from growing in the tea.  This is because at lower temperatures, chemical reactions are slowed.  It will keep brewed tea healthier and fresher for longer than if you were to leave the tea out at room temperature.

P.S. the other person posting is also giving good advice about brewing, green tea usually comes out better if you don&#039;t use boiling water with it, but rather, use slightly cooler water, I usually use 180F water, maybe as low as 160F or as high as 190F for some teas.
